Michelin-starred British-Asian in modern surrounds. An antidote to the chintz of other Lakes venues, Gilpin is a getaway with two distinct hotel experiences to choose from, each as chic as the other. Overlooking the rolling hills, chef duties have changed hands a few times but are safe for now with Roux scholarship winner and Michelin star chef, Hrishikesh Desai. Desai’s experience includes Les Maison de Bricourt and French Laundry; expect seamless British-Asian fusion. The two restaurants on site include the Michelin-starred Hrishi with 3 AA Rosettes, and more casual offering, Gilpin Spice with 2 AA Rosettes. Desai’s flagship restaurant is the real destination though. Opening gambits could include Kyle of Lochalsh scallops with curry mayonnaise and pink grapefruit or chilli glazed poached lobster with claw fritters, avocado mousse and the house mango chutney. Mains dishes continue the subtle non-conformity; Lakes pork belly, for example, comes with wild mushroom ravioli and Chinese five spice while the likes of local Herdwick lamb, Cornish cod and Lerwick turbot are served with spiced foams, truffled onion marmalades, and fresh citrus gels. The wine list includes niche bottles from Germany or Northern Italy while desserts could include a baked passion fruit cream with tarragon jelly and black pepper sorbet, or lime leaf pannacotta, poached rhubarb and crushed honeycomb.
