Another fab addition to the clutch of good, independent Italian restaurants in the city is Vero Moderno. Situated on the regenerated Chapel Street just inside Salford, it joins Salvi’s, Pasta Factory, and Lupo on our list of ‘proper’ Italians which swerve the standard carbonara and bolognese in favour of something a little more considered.

Typical dishes could include gently fried, air-dried cod with sweet and sour cherry tomato and raisins as a starter, and a pasta course of orecchiette with Italian sausage, aubergine and Daterino tomato sauce. They make some of their pastas from scratch and import key ingredients from small suppliers in Italy whenever possible. 

Mains could include a classic pizza such as a margherita with fior di latte mozzarella, or a more extravagant dish such as their sashami tuna steak with an apple, cucumber and balsamic vinegar salad. Desserts include a homemade tiramisu which comes highly recommended. 

Their name captures their philosophy well: it means true modern and is reflected in the simple, understated design as well as in the food.

The wines are from small, independent winemakers handpicked by owner Beppe, so expect to see some names you’ve not come across before. They also have a cocktail menu with a section devoted to Italian G&Ts. If you’re looking for something sweet and bubbly, their prosecco-based Vimto Royal pays homage to Vero Moderno’s location in what was Vimto’s first-ever factory.
