The Halcyon Project Distillery is a must-visit destination for anyone looking for a unique and immersive cocktail experience in Manchester. Owned by the Zymurgorium Group and run by brothers Aaron and Callum, this bar is located in the heart of the city in the Bonded Warehouse and boasts its own in-house distillery.

With a focus on good drinking and a touch of luxury, the Halcyon Project Distillery has an opulent and lavish interior with its own Absinthe parlour.

The drinks menu features easy-to-understand cocktails with complex layers of flavours, each inspired by a different bird. Like the Phoenix Down with Buffalo Trace bourbon – a symbol of rebirth and eternal life. The knowledgeable and friendly staff are well-educated on the profiles of the drinks and are always happy to help guests find the perfect cocktail to suit their tastes.

General Manager Adam Taylor and his team have put a lot of effort into curating the menu, utilising Adam’s six years of experience in cocktail menu design. With its innovative drinks, and a unique take on mixology, it’s no wonder the Halcyon Project Distillery has been named 2023’s One to Watch.
