Spire
Spire, a grown-up bistro near Liverpool’s Penny Lane, is the brainchild of chef-patron and award-winning regional ‘Food Hero’ Matt Locke.
Choose from either the a la carte or prix fixe menu, both bursting with local ingredients and cooked with the flair of a true Francophile.
Typical examples include confit duck with a rhubarb and ginger puree and crisp parma ham, or ham hock with homemade piccalilli and Mrs Kirkham’s Cheddar.
Meat-tastic mains could include Cumbrian fillet of beef with tarragon and shallot butter. While fish could include halibut with scallop and lemon sauce, or lemon sole with crispy jerseys and smoked salmon.
Finish off with desserts such as hot chocolate fondant, homemade malted ice cream, and cheeses with freshly-baked biscuits and a glass of Californian Muscat.
