Set up in January 2017, Skaus’s Dan Cameron and Josh Lundon have been about a bit, serving street food at the Baltic Market and taking over Dockleaf’s kitchen for six months, even ending up on the telly alongside Fred Sirieix. They’ve been on Allerton Road since 2020.

The cafe and store is inspired by Scandinavian culture, seasonal cooking and that famous Scouse hospitality. Everything from the sauces and pickles to the plates and puddings is homemade with minimal food wastage; as far as possible, ingredients are ethically and locally sourced. Dishes change often to reflect availability, but you might find anything from winter salad with beetroot to white bean soup with truffle oil, Swedish meatballs with mash to rarebit made using Love Lane Ale. Sourdough and soda bread is in abundance – grilled, toasted and buttered – and made nearby by the likes of The Bake Hub and south Liverpool micro-bakery du jour Plattsville Bakehouse. Skaus is a daytime cafe predominantly (and currently closes at 4pm), so think along the lines of old favourites like smashed avocado, poached eggs and bacon, sausage and black pudding, just with a bit of a twist. The omelette, for example, incorporates roasted squash, goat’s cheese and crispy sage, and you can add ham hock as an extra.

For the sweet stuff, you’re looking at cakes: warm carrot with blueberry ice cream, maybe, or warm ginger, caramelised pineapple and Chantilly.
