New opening The Perfect Match on the traffic-heavy A56 in Sale isn’t the easiest place to get to but it’s well worth the effort.

This minuscule neighbourhood restaurant is from couple Andrea and Jazz who met while working at Gordon Ramsey’s The Savoy Grill in London. Jazz is the Manchester-born chef – her CV includes The French at The Midland and Hawksmoor Borough Market, as well as Ramsey’s place. Andrea is an experienced sommelier with a background in wine-making (his family have been making prosecco in North East Italy for four generations). 

The Perfect Match brings together their two talents: food and wine, with Andrea recommending a specific wine to complement each dish on the regularly-changing menu. A typical main is glazed lamb breast, with lamb fat chantenay carrots, chervil and soy pickled shitake mushrooms. Jazz’s desserts, such as her caramelised white chocolate mousse, deserve special mention for her command of technique. 

It’s rare to find this level of skill and consistency in such a small operation. Their efforts have already been recognised with a nomination for Best Newcomer at the Manchester Food and Drink Festival, and a mention in the Michelin Guide.
