Franco Manca is one of the London big boys of the sourdough pizza revolution. Franco Manca Trafford Centre continues its tradition of tradition. That is, a legendary Neapolitan sourdough starter, traditional hands-on cooking methods, slow-proved dough made fresh every day, and ingredients from smaller suppliers who are connected to their land.
This is quality pizza as a quick, wipe-down, in-and-out experience, ideal if it’s a stop between shops, a hunger fix before a film, or a food adventure with kids who don’t want to sit still for three courses of fine dining.
Franco Manca is where slow food meets fast food. The traditional techniques of Napoli pizza and a sourdough starter with around 50 years more history than Mrs Beeton come together in tasty pizzas that are wolfed down in around half an hour or less.
The ham, mozzarella, ricotta and wild mushroom pizza is a good choice and the halloumi, roasted pepper and watercress pesto is a more interesting option that also works well. Pizzas are the main event. Other than that, there are a few desultory salads, bowls of smoked almonds and charcuterie platters and the compulsory tiramisu dessert.
Although a speedy dining experience, Franco Manca Trafford doesn’t lack quality – it’s the ideal answer if you want a bit of both.
