Blinker Bar
The name for Blinker Bar comes from a forgotten classic three-ingredient cocktail made from rye, grapefruit and raspberry. It’s this curious collection of ingredients that inspired ex-Gordon Ramsay bars boss Dan Berger to create a menu that changes seasonally but still honours the classics.
At the top of King Street on Spring Gardens in Manchester City centre, Blinker Bar occupies a grand building close to Hotel Gotham and Six by Nico.
On the cocktail list, find dedicated sections for the Martini and Old Fashioned including a Champagne Martini made with Grey Goose, Lillet Blanc and Champagne cordial and a Tropical Old Fashioned with flavours of cacao nib and coconut.
Seasonal menus revolve exclusively around local ingredients and are dictated by seasonality. You’ll find up-to-date versions of the gin and tonic, French Martini and highball cocktails.
Of course, the bar back is chock full of spirits from around the world – the staff know exactly what they’re doing with a jigger. And you can even have snacks delivered to your table. Think truffle crisps, cacio e pepe toasties with three types of cheese and black pepper or a sausage roll from local Ate Days a Week served with mustard.
