Proove is Didsbury’s answer to the kind of proper Neopolitan pizza served up successfully by the likes of Rudy’s or Honest Crust. Giant woodburning pizza oven? Check. San Marzano tomatoes, Fior Di Latte mozzarella and Nduja? Check. Neon orange Aperol spritz on the side? Check. All the classics are there, with options for vegan cheese and gluten-free bases.
Alongside all those beautiful, blackened-crusted, droopy centred pizzas are a tempting collection of Italian ‘street food’ plates. Everyone knows all about arancini by now, those gooey-centred balls of deep-fried leftover risotto, but there are a bunch of other deep-fried delights like dough and mashed potato on offer here too. You can add a rocket salad for balance, if you must.
The interior is sleek and modern with dangling copper light fittings while the zig-zag black & white tiles and natural wood bring a touch of the Alpine.
